As the trees turn all shades of burnt orange and quince yellow around us and with the smell of log fires in the air, we pull on our scarves and wellies, venture out from our cosy cottages and explore the surrounding countryside.

We welcome into our kitchens an abundance of root vegetables freshly dug from our market garden, game has arrived on the menu and heritage varieties of apples flavour our seasonal Bellini cocktails in the bar.

Seasonal Cookery

We are lucky to be surrounded by nature’s incredible larder, both wild and foraged. For those wishing to master the art of game cookery, the Daylesford Cookery School hosts a Game Preparation and Cooking class, demonstrating how to pluck, dress and prepare your game before cooking it, guiding you through each step of the process as you do it yourself.

For those wanting to embrace the very best of autumnal root vegetables, the Seasonal Salads course is a must. This course celebrates the wonderful salads and produce found at Daylesford farm all year round, with inspiring tips, recipes and all manner of salad variations to be enjoyed throughout the year.
